Summer pudding

Summer pudding is a very much healthy food.It takes few minute to prepare.



You will need
300g/10½oz mixed frozen fruits, de-frosted
1 large punnet of strawberries, tops removed and halved if large
4 whole fruits reserved for garnish
5 tbsp caster sugar
5g fresh Basil, chopped
10 slices good white bread, crusts removed
1 jar raspberry sauce
For the Garnish
icing sugar
4 whole strawberries
4 sprigs of mint
You will need only 6 slices for one large pudding

How to prepare Summer pudding
  • Lightly oil 4 teacups or one large bowl (1.2l/2pt) and line with cling film.
  • Mix together the defrosted fruits, fresh strawberries, basil and sugar.
  • Pour half of the raspberry sauce into a shallow dish.
  • Cut the bread to form a small circle for the base, slices for the sides and a larger circle for the top. To line the mould - dip the bread on one side in the sauce and place in the mould, dipped side against the mould. Make sure the pieces overlap to securely encase the filling.
  • Fill the centre with the fruit mixture and press down well, top with the last slice of bread.
  • Remove the pudding from the mould and place on a plate. Pour over the remaining sauce and garnish with the fresh strawberries and sprigs of mint. Dust with icing sugar and serve.
